Dark Chocolate Covered Strawberry Truffles


If you weren't already into bad boys, you will be after trying this recipe. These bad boys are vegan, gluten-free, and they only require 3 simple ingredients. If St. Valentine were here, he'd rejoice in the decadent flavors and silky-smooth texture of these truffles. May he rest in peace.

Ingredients:

1.2 oz bag of freeze dried strawberries

1 cup + 2 Tbsp full-fat canned coconut milk (use the cream that settles at top of can)

10.5 oz 70% or higher dark chocolate

Optional Rolling Ingredients:

cocoa powder

powdered sugar

extra freeze-dried strawberries

Directions:

1. Set up a double broiler on the stove with a saucepan and heat-proof glass bowl fitted inside. (Use a bowl that will sit in the saucepan without touching the bottom of the pan)

2. Add the strawberries to a food processor and pulse until the strawberries turn into a powder-consistency.

3. Add 1 inch of water to saucepan and bring to a boil. Once boiling, place glass bowl on top, making sure the water does not touch the bottom of the bowl.

4. Add the coconut milk and strawberry powder to the glass bowl and whisk until well combined and no clumps are detected.

5. Break the chocolate into small pieces and add to the bowl. Stir until most of the chocolate is melted and incorporated.

6. When the chocolate has almost melted into the milk and strawberry mixture, using oven mits, remove the glass bowl from the saucepan and continue to stir until the mixture is smooth and silky.

7. Cover the bowl with plastic wrap and place in the refrigerator for 2-3 hrs, until mixture can be scooped and rolled into balls.

8. Remove the truffle mixture from the refrigerator and set up your rolling ingredients. (I used cocoa powder and poured enough into a bowl so I can roll the truffles in it after shaping each ball)

9. Using a cookie scoop, scoop about 1 Tbsp of mixture into your hand and roll between your palms to form a ball. Continue until all of the truffle mixture is gone.

10. Roll each truffle in the topping of your choice and refrigerate for at least 10 minutes before serving.
