Peanut Butter Power Bites
I really like chocolate... a lot. Every day around 1:30, right after I eat my lunch, I'm attacked by the chocolate craving and I've been known to lose the fight sometimes. And by sometimes, I mean every day. Every single day. Because chocolate is delicious and chocolate cares. Also, chocolate is apparently a vegetable? After all, cocoa does grow on trees... amiright?
Although I select my chocolate carefully (80% cacao, usually) and am always sure to indulge in moderation, I've concluded that it's time to add a little extra nutritional value to the post-lunch treat. I present to you...my balls! You're welcome.
Ingredients:
1 1/4 Cup Rolled Oats
3/4 Cup Natural Peanut Butter (creamy or crunchy!)
1/2 Cup Ground Flax Seeds
2 Tbsp Raw Honey
1/4 Cup Semisweet Chocolate Chips
Directions:
Combine all ingredients and mix well. I find that it's best to use your hands, just be careful not over mix/melt the chocolate chips. Once mixed, roll into balls and store in fridge for up to 1 week. Each ball is about 160 kcal.
