Ground Turkey & Quinoa Stuffed Cabbage


Ooops, I did it again. I'm bringing to you yet another crock-pot recipe.

These little "piggies" stayed home- in the crock-pot, for just about 4 hours, while I ran my errands for the day. I took the traditional recipe of red meat and rice and turned it into this light, delicious, and convenient recipe. Voila!

I was inspired to make these when I was roaming the "fun aisle," as I like to call it, at Aldi's. Candles, and slippers, and roasted red pepper quinoa (?), oh my!

I couldn't find the exact quinoa I used for my cabbage rolls, however I found similar boxes on Thrive Market, and also one at Wegman's.

You can certainly use plain quinoa and add your own seasonings to this recipe, but the roasted-red-pepper quinoa I used made the prep and cooking processes tasty and easy!

Ingredients:

2 lbs Ground Turkey

1 Box Roasted Red Pepper Quinoa

1 Large Head Cabbage

24 oz Tomato Juice, divided (8 oz and 16 oz)

1 tsp Oregano

Instructions:

1. Boil a pot of water. While water is boiling, separate leaves of cabbage.

2. Once water is boiling, drop cabbage leaves into pot, one at a time, give it a stir and cover with lid for about 4 mins. Cabbage should soften, but not completely.

3. Remove cabbage from pot and place on a clean surface to cool completely.

4. While leaves are cooling, put ground turkey and about 1 tsp salt, and 1 tsp pepper, and oregano in a pan and cook completely.

5. Follow directions on quinoa box to cook quinoa. I cooked mine in the microwave for a speedier process.

6. In a large bowl, mix together quinoa and ground turkey. Pour 1 cup of tomato juice into mixture and stir to combine. Mixture should not be runny. If mixture is runny, just drain the excess tomato juice.

7. In your cooled cabbage leaves, scoop 1-2 Tbsp of turkey/quinoa mixture and roll burrito-style. Place in the crock-pot seam-side-down. Continue rolling until each leaf is filled.

8. Once leaves are filled and placed in the crock-pot, pour remaining tomato juice of the top. Cover crock pot and cook on high for 3-4 hours, or on low for 5-6 hours.

9. You can also skip the crock-pot and cook the cabbage rolls in the oven on 375 degrees f, for about 45 mins.
