2-Ingredient Crock Pot Pulled Chicken

We all have those days when we can't be bothered to cook. When I ask people what's holding them back from eating healthy, they commonly tell me that they "just don't have the time." If you're someone who doesn't have much time to cook dinner, or even someone who just doesn't like to cook, this recipe is for you.

When I'm in a pinch for time, my go-to week night meal is some variety of tacos. I hold fajitas, tacos and quesadillas VERY close to my heart. They're great because there's little prep and cooking to complete the process. Usually, I'll brown the ground turkey in a pan and set up an assembly line of diced tomatoes, shredded lettuce, black beans, cheese, guac, sour cream and salsa. All of the toppings are so easy to prep, and if you can't be bothered to dice tomatoes and shred lettuce, you can even buy them already-prepped, in packages. Score!

To switch it up a bit, I decided to make this 2-Ingredient Pulled Chicken. If you're interested in saving even more time, keep reading.

Ingredients:

3-4 Chicken Breasts, boneless, skinless and cleaned

8oz Salsa of your choice (I use low-sodium, organic)

Cooking Instructions:

1. Add the chicken breasts into the crock pot.

2. Pour the salsa on top of the chicken. You may need more, or less, depending on the size of the chicken breasts.

3. Add enough water to the pot to cover half the sides of chicken breasts. Do not cover them completely.

4. Cook on low, 6-8 hours, or on high, 4-5 hours.

5. Once chicken is cooked through, and center temp is ~165 degrees f, turn crock pot off and shred chicken with two forks.

6. Add to taco and shells or bed of lettuce and top with preferred toppings!
